The best of buffet is obviously the assortment and wide selections but the Ramadan Buffet is always a little more localised with plenty of actions going on at the cooking stations. People were waxing lyrical about the usual suspects but Executive Chef Juzaili at the Pullman Bangsar’s LINK has got his specialties that really steal the limelight. There is a whole lamb marinated in a secret blend of spices and roasted to golden perfection and at the same time an unlimited dibs at the selection of their international spread. The food is truly global, with the local favourites sharing the spotlight with a host of western delicacies.

Diners will be entertained by an enchanting live performance by the Ghazal Band, playing nightly during the entire dinner service which creates a lively ambience to this dining experience. According to the Mr. Andrew Carlile , General Manager of Pullman KL Bangsar, buffet preparation this year has great emphasize on food authenticity so buka puasa will be traditional and memorable. Guests are also able to break their fast and enjoy their dinner with a variety of delights from fresh cut seafood, assorted gulai kawah, bubur lambok, Mongolian grill, and the comeback of last year’s crowd favourite due to popular demand- the Oxtail Gear Box Soup.

The assortment compilation of dishes are fantastic for nibbling away to break fast. A walk through the gorgeous assortment of eye catching colours was quite an experience to discover flavours that could not only satisfy your palate, but also refining it. From starters to mains, and their highlight to the local favourites, there isn’t anything that I dislike.

Renaissance TEMPTations Ramadan Buffet 2018

 

Being a multiracial country also means having the unique privilege of plenty of delicious selection of Chinese and Indian cuisine as well. We have Executive Chef Supi Mansor curating a buffet feast to please every palate of our diverse culture and tradition in culinary. Starting 16 May to 14 June 2018, Renaissance Kuala Lumpur celebrates the Ramadan Buka Puasa buffet this year with the very authentic Malaysian favourites. Priced at RM 138 nett per person and half price for children between 6 to 12 years old, we are looking at Malay classics like sambal sotong petai, ayam percik, kerabu and sup tulang rawan. Of course, the must have bubur lambuk, as well as the daily roasted whole lamb.

Some traditional favourites for the breaking of fast is definitely a must have and along with the lively ambience of this dining experience is where food authenticity in the buffet preparations were greatly emphasised on. The mandatory Bubur Lambuk, and some amazing starters like Sup Tulang Rawan and mains like the Kari Kambing dengan Ubi kentang and Ayam Percik already giving the festive vibe inevitably. And that daily Roasted whole lamb with some other live stations cooking your noodles and grilling the Satays were some of the favourites at the preview of the Ramadhan buffet.

Others include the fresh seafood, as well as the Chinese and Indian hot selections including the Braised broccoli and scallop with crab meat sauce, Wok fried black pepper beef, with Mutton biryani rice with cucumber raita and Amchoori bhindi to name a few. And like every other buffet, the sweet ending is going to be a showcase of gorgeous colours including some Malay kuih such as the Ondeh-ondeh, Kuih Ketayap, Lopes gula Melaka and Biah melaka kukus.

Chinese New Year lunch at Pullman Bangsar

 

Call it Lou Sang, Lou Hei, or even Yu Sang, otherwise also known as the prosperity toss is the always a centerpiece of a typical Chinese New Year banquet feast. Things are not any different here at the Pullman Kuala Lumpur Bangsar. Best to kick off the meal, this delightful mix of salad and bursting flavors and colours that represents abundance is always the first to reflect vibrancy in the new year. We tossed our way up at the recent lunch session and that was followed by individual bowls of piping hot comfort of delicious Double Boiled Song Ji Mushroom Broth with Conch Slice and Chicken, as well as the Steamed Giant Pearl Dragon Grouper with Shredded Ginger. The not-so-conventional fish dish is probably one of my favourite- Slices of fish gracefully steamed to the right texture with every silky piece skilfully cut. It is so satisfying to eat. No harsh bites, only rich chewy collagen and sweet bouncy flesh.

Also expect delicacies and classics elevated like this Braised Assorted Sea Treasure in Bamboo Basket, and the Waxed Duck Rice wrapped in Lotus Leaves. The thing about typical Chinese New Year feast is that there is no exception when it comes to luxury ingredients. We are talking about abalone, sea cucumber, fish maw, Chinese mushroom, prawn, smoked oyster, waxed duck, roasted duck, Chinese cabbage, and broccoli in that treasure pot.

What sets one restaurant apart from the other is probably the chef’s extraordinaire and an impeccably-styled pursuit of preparation of mandatory signature dishes. That was reflected in the dessert when the chef presents his creation of Homemade Carp Fish Nian Gao to go with Double Boiled Soy Milk with Snow Fungus, Lotus seeds, and Sea coconut. CNY 2018 with Dynasty Restaurant @ Renaissance Hotel KL

 

Year after year, Dynasty restaurant at Renaissance Hotel fire up a line-up of auspicious dishes on for Chinese New Year. 2018 is no different and this year, focusing on healthier feasting with traditional ingredients while emphasizing on light and fresh flavours. And the best part is that the menu is running from the 27th January, all the way until the 11th February. So, you have plenty of time to get down to Renaissance KL to sample it.

 

Chef Kin has created 3 festive set menus complete with Yee Sang and Dynasty’s fortune pastries. They are Happiness at RM 1788 nett, Fortune at RM 2188 nett and Longevity at RM 3388 nett per table of 10 persons. Of course, there is the six (RM 378 nett) and seven course (RM 578 nett) Double Delight menus for 2 persons while the group of six (RM 1188 nett) are covered with the 9 course Six Happiness. I’ve sampled some of the dishes and am already getting the festive vibes !

 

Starting with of course the lou sang, this one was action packed as we dug our pair of long chopstick onto the plate and gave it a stir to bring on the prosperity and good luck. The little ones on the table sure looked super cute when tossing this. I bet children absolutely would enjoy this very much for sure. It looked like rainbow when combined and the crispy cracks with the tang from the sauce is a good taste of refreshing starter.

Following close behind was thick seafood soup replacing sharks fin, yet not far off from the prestige symbol of its luxury and affluence from all these decades. On the serving table was the Braised five treasure soup with crab meat and sliced abalone. We’ve also got a whole steamed fish dramatically served and perfectly cooked nicely, it was a lovely dish. Fresh Sea Grouper with sliced ginger and chili for both the fish lovers and non-fish lovers.

When the next one arrived, it did look impressive with plenty of luxurious ingredients and was somewhat beautifully arranged in a pot. There are abalone, prawns, scallops, and a whole plenty of other precious ingredients traditionally enjoyed by the Chinese at special occasions. Myself isn’t quite a big fan but I wasn’t overly disappointed. In fact, the oysters were really addictive. Speaking of that, is when the dried oysters also made appearance in more dishes that night to make the dish shine. Thankfully for the sun-dried oysters, or otherwise would be rather underwhelming with very little vegetable on top of the weird vegetarian siuyuk.

Crispy almond chicken was great though. I love it crispy and wholesome with almond lining at the bottom chicken. Cut nicely into bite size to serve, these thin slices of chicken were very pleasant to munch on continuously. I couldn’t pay much attention to the Supreme seafood golden fried rice with XO sauce despite craving fried rice. I love the fact that every dish is light and healthier.

Impressive line-up of food, with a definite seafood slant and to end the night was the final course of Double boiled sweetened chrysanthemum tea with pear, red date and aloe vera and Dynasty’s fortune pastries. The first was refreshing sweet with hints of chrysanthemum and pairs perfect with the nian gao!

Dynasty Restaurant is open daily for lunch from noon 12 to 2:30 pm and dinner from 6.30pm to 10.30pm. Dim Sum breakfast is served from 9am to 2.30pm on Sunday and from 10.30am to 2.30 pm on public holidays.
Take – away Yee Sang in full or half can be arranged for home reunion starting from RM 118 nett. Deluxe Yee Sang is priced at RM118 nett for half or RM 228 for full, and Premium Yee Sang at RM 188 nett for half or RM 368 for full respectively.

Hearty Spread for the Prosperity Year @ Aloft KL

 

Aloft KL are set to immerse your senses with a prosperous spread at Nook, WXYZ Bar, MaiBar and its function spaces for an auspicious start to the Chinese New Year. Starting 22 January – 2 March 2018, Aloft Kuala Lumpur Sentral will be offering a wide range of dishes in celebration of the Chinese New Year, focusing on the use of fresh and auspicious ingredients and complete with the prosperity toss of the Yee Sang. The feast began with cocktails from the bar and lousang, which was a lively and rowdy affair with the accompanying loud ‘lou hei’ as we enthusiastically tossed as high as possible for good luck and abundance fortune. But everyone was enjoying it as much as we enjoyed looking at the plating. Although, it wasn’t technically served on a plate.

The Prosperity Tuberosum Salmon Yee Sang together with the Golden Pumpkin Jelly Fish Duo Yee Sang will both be available for take-away in two sizes, regular and large. The Prosperity Tuberosum Salmon Yee Sang is priced at RM128 nett for the regular size and RM198 nett for the large while the Golden Pumpkin Jelly Fish Duo Yee Sang is priced at RM113 nett for the regular and RM148 nett for the large. Nook’s Lunar New Year buffet dinner during this period is priced at RM118 nett per adult.

Warm up the appetite with some thick Braised Crab Claw Scallop Broth and you’ll be so ready to dive into the next dish. Guests who are looking to dine in private with a set menu and the traditional round table setting can do so by booking tables in our event and function spaces with an option of three menus to choose from. The menus were created by the Chinese Cuisine’s Executive Sous Chef, Ng Kok Wai, and offer a combination of traditional and modern dishes to shake-up the traditional Lunar New Year menu offerings. I’ve sampled a series of signature dishes at the media preview and it was one of the few good ones I’ve eaten so far. Dishes are big in portion so put on your stretchy pants and get ready to feast on crab and prawns until your heart’s content!

I recommend tucking into the Fragrant Taro Smoked Oyster Lotus Leaf Rice. The fragrance lotus leaf already super flavourful and locking the lovely aroma of smoked oyster. Together with their Classic Eight Treasure Chicken that is also cooked very perfectly with meat still juicy and moist and filled lusciously with good luck and prosperity. It’s packed with flavours from the nuts, mushrooms and vegetables and served as a whole chicken for the ultimate Lunar New Year feast, this one is too good to say no.

This isn’t my debut visit to Aloft for food but it certainly was my first with their Lunar New Year banquet. Food is super generous in portion and every flavour meticulously paired and matched to perfect elegance and meaningful in conjunction to the auspicious festive celebration. By the end of the day, I was full to the brim with the delicious spread of dishes on the day but there is no way I could resist such tempting looking dessert. The sweet finishing to the meal looked tastier than tasted for sure, but the ingredients in the Signature Sweetened Snow Lotus were very impressively matched and done. To name a few, there were longan, pomelo, sweet popping pearls, and many more.

For the New Year season, Aloft’s Auspicious 9 package features the three set menus, Happiness, Prosperity, Auspicious, offering guests with an exciting package for a sit-down luncheon or dinner celebration. The Hotel’s Happiness menu offers diners with 8 festive dishes starting with the Prosperity Tuberosum Salmon Fish Yee Sang, Double-boiled Fish Maw Cordycep Broth, Classic Eight Treasure Wild Duck, Steamed Live Red Mullet Fish, Extremely Tasty Egg Baked Tiger Prawn, Wealth Foison Cheese Angle with Asparagus and Premium Cranberries Egg Fluid Fried Rice and a dessert dish to end the meal on a sweet note with the Signature Sweetened Snow Lotus in Red Bean Cream.

 

The Prosperity menu, priced at RM1899+ is a 8-course menu in which features the Golden Pumpkin Duo Fish Yee Sang, Braised Crab Claw Scallop Broth, Crisp Fried Almond Seaweed Chicken, Fortune Golden Hot Garlic Sand Sea Bass Fish, Calamansi Buttery Tiger Prawn, Golden Corn Kernel with Duo Flower, Fragrant Taro Smokey Oyster Lotus Leaf Rice with a cold dessert dish, Chilled Sweetened Pomelo with Snow Lotus.

 

The Auspicious menu on the other hand, is a 6-course menu priced at RM1699+. This menu offers the Golden Pumpkin Duo Fish Yee Sang, Classic Poached Steamed Chicken Roulade, Golden Tangerine Crispy Live Red Snapper Fish, Fortune Exploding Bamboo in Curd Roulade, Fragrant Taro Smoked Oyster Lotus Leaf Rice, Double-Boiled Lotus Soy Bean Broth.

Apart from museums and art galleries, Italy has a rich culinary heritage and some of the most celebrated wines. It is no suprise that enogastronomic is trending big. Organised by the Italian Trade Agency Kuala Lumpur in collaboration with The Embassy of Italy Malaysia Business Association, we celebrated The World Week of Italian Cuisine’s 2nd edition with a series of dinner pairing. Themed “Italian Street Food is Gourmet”, this unique culinary experience was held in Villa Danieli @ Sheraton Imperial KL.

Think dishes like scallop roasted and beautifully sitting inside the smoked winter garden and potato foam for starter and some risotto cleverly reinterpreted with creamy oyster dressing and pumpkin dripping, plus a light refreshing tang of lemon air. Not forgetting the Portate Principali as well as the dessert to complete the gala dinner. Highlights include Sea bass fillet and lamb loin pairing with juicy and balanced tanin. Cesanese di Olevano Romano does an excellent job enhancing the flavours, a testament to the chef’s collaborative efforts.
