Cherry Smoothie

 

Smoothie bowl is now more than just a new favourite or some might have labeled it as an obsession for me but they are actually not just a favourite breakfast or dessert- they’ve officially became a creative outlet much like a canvas to paint my kinda art. I mean the fun to design the top of the bowl is satisfying and really getting my artistic brain cells working hard. I mostly put in a lot of thought from my styling and plating and it is no doubt that desserts and sweet food makes the prettiest appearance. So, the gorgeous toppings aside. The base are the ones that’s really challenging because it is what determines the taste, texture, colour, and most importantly nutritious.

 

Speaking of nutrients, I made a cherry-based smoothie bowl when cherries were in season some time ago. Cherries are known to be loaded with antioxidants and polyphenols that help fight disease, on top of the rich vitamin C and fiber. Being a natural food source of melatonin, which can help to improve sleep, cherries are all rounded essentially good for us. Though, I wouldn’t recommend excessive consumption because they are also fairly high in sugar. Those who followed me through my journey on Instagram would also know that I recommend moderate intakes on top of matching ingredients in all my bowls.

 

Cherry Smoothie Bowl

 

Here is a good tip to mellow the sweet in your smoothie bowls. Use bananas that are slightly under ripe and include some oats for a thicker consistency. Not only that would help with the taste, the oats would give the extra fill to last longer throughout the morning.

 

Enjoy this cherry bowl recipe. And even though I didn’t decorate them much yet when the photos are taken, I include the recommended toppings so maybe you all can try decorating yours and tag me on Instagram?

 

INGREDIENTS
• 2 cups of frozen cherries, pitted
• 1 frozen banana
• 2 Tbs oats
• ¼ cup coconut water

 

Blend everything as smoothie base.

It is becoming obvious now that I’ve been sharing them on insta stories and sometimes on the ig feed. But for those who are still unsure of ways to use proteins simply as meal replacement or to keep you full for a longer time, this is the recipe that would help bring smoothie bowls to a whole new level. I’ve been getting dms and sometimes mails asking me on what’s the best way to add protein to the smoothie bowls when I thought it was something generally known – something I never thought off cause I’ve been casually adding proteins to my fruit bowls for the longest time ever.

 

There are many ways to fuel the morning with clean and nutritional ingredients and adding lots of fruits to it isn’t the healthiest way to start your morning. This is a misconception people have for most of the time and that is why I emphasized a lot on starting the meal with moderate amount of sugar. Adding carbo and protein to your meal is a good way to make sure you start the day with moderation.

The recent addiction is hemp and they and crazy delicious as toppings on my bowls. Then when soluxe protein collaborate with Granola Geeks to come up with chocolate protein bites and chocolate protein coco chunks, I‘ve got another favourite thing to not only snack on, but to add them onto my bowls! This smoothie bowl recipe is gorgeous using the later because of the dark chocolate coating on the crispy chunks of coconuts.

Banana Cake Recipe with Cream Cheese inspired by Posie Harwood

 

When Posie Harwood posted on food52 about a better rendition of banana cake since the ones with yogurt added to it, I am all nuts over it and obviously jumping right into this new recipe almost very instantly. The addition to this version of banana cake is the addition of cream cheese into the recipe, and boy is this the most genius method ever. Adding cream cheese to classic banana cake recipe is an excellent trick indeed. The small amount actually gives a lovely texture and good flavour without weighing down the bread too much.

Ingredients:

 

• 85g salted butter
• 30g granulated sugar
• 40g brown sugar
• 1egg
• 1/4teaspoon vanilla extract
• 50g cream cheese, softened
• 50g Greek yogurt
• 2medium bananas, mashed
• 1 1/2cups all-purpose flour
• 3/4teaspoons baking soda
• 1/4teaspoon cinnamon
• 1/4cup uncooked millet or chopped mix nuts for extra crunch (optional)

 

Method:

 

1. Preheat the oven to 180° c. Grease a standard-sized metal loaf pans.
2. Melt the butter in a large bowl. Add the sugars and whisk well to combine.
3. Add the eggs, mixing in each one at a time, then the vanilla and salt.
4. Add the softened cream cheese and Greek yogurt. If your cream cheese doesn’t fully incorporate, and has some lumps, transfer your batter to a stand mixer (or use a handheld electric mixer) and beat on high for a few minutes. The batter will lighten up in colour and the lumps should smooth out. If you like to have lumps of cream cheese in between the banana cake bites, lightly mix the soften cheese.
5. Add the mashed bananas and mix well.
6. Add the flour, baking soda, and cinnamon if using. Stir until the batter just comes together. If you want to use millet, which gives the bread a wonderful crunch, add it now.
7. Bake for about 1 hour, or until a tester inserted into the center comes out clean. Remove from the oven and let cool before turning out of the pans and slicing.

 

Serve with some crushed pistachio nuts and Greek yogurt with a light drizzle of honey.

Feeling very pink today and super in love with those raw cacao sweet nibs from Bigtreefarmsbali. They are cold processed and raw and works best with this pink combo. If you follow my instagram account, you’ll see that I use alot of this in my breakfast.

Golden Smoothie Bowl with Mango and Orange (Recipe)

 

Mangoes are awesome when it comes the the rice aroma and natural sweetness of the fruit. And while the fruiting season is on, I’ve been having them for breakfast and mid day snacking with granola and nuts most of the time. Mangoes are the only fruit I don’t need to order because we have a mango tree that bears fruits like crazy at every fruiting season. Blended mango juice is great but it doesn’t beat a mango smoothie bowl. Plus, the bowl is obviously aesthetically a whole lot prettier than the glass. Let’s just say I do it for the gram. LOL.

3TBS instant oats
1/2 cup yogurt
1/4 cup cauliflower
1/2 cup water

Ever struggled to eat raw greens? Or getting the little one to consume the nutrition from the greens? This one is a great solution to make sure we have as much greens as possible.

We all know the greens are best consumed raw but have always hated the flavour. The easiest way is actually masking the green with aromatic fruit to make the most delicious and nutritional smoothie bowl to start the day clean and stay healthier. When Kellogg’s released their latest breakfast product, I tried introducing it to my niece and made a smoothie bowl to go with the granolas. Topped it with bananas to make it fancier just so she would be convinced to eat it but to my surprise, it was polished in no time!

Ferment kimchi with Panasonic Electric Oven

 

Packed with all goodness of lactobacillus and super rich in flavour, the sophisticated taste from kimchi is produced with very simple and affordable ingredients. And albeit the variation of kimchi types, they all do not stray far from the basic techniques of brining and fermenting. And the recent addition of my electrical appliance made fermentation good and easy for my kimchi batches. The new Panasonic Electric Oven NB- H3800SK (RRP: RM 669) comes simple analog knobs to simplify operations for users and this automatic Fermentation function produces optimum environment of warmth for products to be fermented. Most importantly, the oven enclosure creates a draft-free environment so items undergoin fermentation do not dry out. We know how perfect that would be for bread proofing. I know I am super loving it!

 

1.Ferment kimchi with Panasonic Electric Oven

 

Here is the recipe for this simple kimchi recipe that I make all the time when I need things to be quick and fast. This one is replacing napa cabbage with our local round cabbage. I bought mine from Cameron organic farm but any regular round cabbages would work equally great. Round green cabbages are thicker and crunchier and a lot sweeter than napa cabbages when turning thme into kimchi.

 

This recipe makes 1.5 L kimchi :

 

Ingredinets and methods:
Chop and dice a medium sized cabbage (approximately 1.2kg) into 1-2 inch pieces and sprinkle 3 Tbs coarse salt evenly all over the pieces of cabbages and let it sit while making sure to be tossing it once or twice within the 2 hours. Wash and rinse twice and drain well before mixing the mixture of chili paste.

For the mixture of chili paste, put together 50 g julienne radish and 1-2 leek (optional) , some chives and spring onion, the blend of all 1 inch knob of ginger, 3 Tbs shrimp sauce, 1 pear, quarter cup of hot chili pepper flakes, half yellow onion, ¼ cup chopped garlic and glutinous rice paste ( cook ¼ cup glutinous rice flour with 1.5 cup water on stove till gooey) .

Mix and pack everything into jar and ferment in oven for 1.5 hours.

Eat this as it is, or store in fridge to eat it as a cold side dish. Along with amazing nutritional value, kimchi can also be used as ingredients to also cook many other delicious dishes.

D’Ark’s Roasted Beetroot Salad inspired, with Panasonic Electric Oven

 

Cooking and meal prepping can be a hassle at times but if you want to serve the best nutrition then nothing beats home cooking dishes. It is a great way to eat healthier and more affordable. But the hassle of cleaning and washing could be another disagreeable thought at times. To offer a break from washing a sink full of pots and pans, why not cook with the oven? This is a dish inspired from my recent visit to D’ark in Bangkok and with a little tweak of ingredients; this could be a good starter or even a great sharing portion if you are throwing a party.

 

1.Citrus beet salad with truffle oil - D’Ark’s Roasted Beetroot Salad inspired, with Panasonic Electric Oven

 

I’m remaking their beetroot salad and although it is simplicity personified, cooking still scream of effort to many people. Fret not; all you need in this recipe is your oven, and a baking pan. You can eat right from the pan to minimise more washing but I love plating my dishes so I don’t mind washing an extra plate. LOL.

The recipe is basically super simple – Baby beets simply roasted to bring out their sweetness need just the barest drench of olive oil and a sprinkling of fresh herbs.

Ingredients:

 

• 10 baby beets each 1 to 1 1/2 inches in diameter unpeeled all but 1 inch of tops trimmed, rinse. (Can be subsitude with 1 large beet of approximately 450g, peeled and cut into 1 inch cube size.
• 2 large fresh sage sprigs, plus additional sprigs for garnish, and some thyme
• 1 tablespoons unsalted butter
• 1/4 cup olive oil
• 1 tsp white truffle oil (optional)
• Kyubu orange yogurt Japanese style Cheese Cubes (can be replaced with mild cheddar cheese)

Serve this with dollop of Greek yogurt, some orange cuts for the extra zesty aroma and a grate of orange zest.

 

Preparation

 

Preheat oven to 200°c. Place beets in roasting pan. Melt butter and add herbs onto the beets. Drizzle olive oil to coat generously and thoroughly before covering pan tightly with foil to roast for about 30 minutes. The new Panasonic Electric Oven NB- H3800SK (RRP: RM 669) comes with double insulated glass door to keep the temperature high internally but does not cause a burn when accidentally touching the door from the outside.

Sprinkle a dash of sea salt, let it cool and serve either on plate with or without garnishing with additional thyme sprigs or directly from the roasting pan. Also drizzle truffle oil to complete this amazing appetizer.

Tahini for Breakfast

Breakfast is crucial yet many struggle to eat right to start the day right. Cooking and meal preping can be a hassle at times but if you want to serve the best nutrition then nothing beats homecooking dishes. A disagreeable thought is when we have to sacrifice sleeping time to wake up early for meal prepping. That is why, tahini is another healthy choice to go with your bread and egg !

Ingredients and method

200g sesame seeds roasted till golden brown and blend together with 1 Tbs chopped garlic and 3 Tbs of vigil olive oil. Don’t forget to season with a pinch of salt.Serve as cracker dip or spread it on your grainy toast. To prep as brunch, pair with mashed avocado, and sprinkle with paprika and chopped chives. Drizzle some extra olive oil before serving and accompany this with some eggs of your choice.

Baking with Panasonic Cooking

It’s national dessert day and when else is best to share this dessert recipe I recently obtained at the Panasonic Cooking House Workshop led by Chef Collin Lim if not today? Those who followed my insta stories would have probably seen me posting stories from the event itself but to those who have not; this one is a keeper.

Ingredients for cupcake:

 

110 g plain flour
1.5 tsp baking powder
125 g butter
100 g castor sugar
2 eggs
0.5 tsp vanilla essence
2 tbsp milk

Ingredients for toppings :

 

White fondant Buttercream in various pastel colours Edible gold dust Black edible marker

 

Method:
1. Preheat Panasonic Electric Oven to 180°C on upper and lower tubes.
2. In a bowl, sieve together flour and baking powder.
3. In a separate bowl, cream the butter and sugar until white and fluffy.
4. Add eggs one at a time, creaming well in between each addition. Stir in vanilla essence.
5. Fold in flour mixture. Stir in milk. Be careful not to overmix.
6. Fill cupcake cups to about 2/3 full and place them onto baking tray.
7. Bake for 20 — 25 minutes or until cooked. Cool.
8. Decorate with fondant and buttercream — Make horns (push a toothpick halfway into each horn) and ears out of fondant and dust with gold dust, then leave to dry. Cover the cupcakes with rounds of rolled fondant. Attach the horns to the cupcakes. Pipe buttercream stars around the horns and attach the ears. Finish off with drawing the eyes.

Makes 4 cheesecakes

 

Ingredients for the cheesecake:
250 g cream cheese
50 g sugar
8 g cornflour
3 egg yolks
55 g cream
1/8 tsp salt

 

Ingredients for the salted egg yolk filling:
2 salted egg yolks (fully cooked, use egg yolk only)
20 g butter
18 g icing sugar
13 g custard powder
5 g cornflour
9 ml evaporated milk

 

Ingredients for the base:
75 g Kellogg’s Corn Flakes
35 g melted butter

 

For garnish, some Chicken floss

 

Method:
1. Preheat Panasonic Electric Oven to 180°C on upper and lower tubes.
2. To make the base, grind Kellogg’s Corn Flakes into powder.
3. Combine corn flakes powder and melted butter; press onto bottom of ring moulds. Chill.
4. For the salted egg yolk filling, cream butter and sugar then add in salted egg yolk followed by the remaining ingredients and mix well.
5. Place mixture into a piping bag and pipe into small dollops and freeze overnight.
6. For the cheesecake, beat cream cheese, sugar and corn flour till light and fluffy.
7. Next add in egg yolks, cream and salt. Beat till all is well mixed.
8. Spoon some cheese mixture onto the crust then place a frozen salted egg yolk dollop into the middle.
9. Then cover with another layer of cheese mixture.
10. Bake the cheesecakes at180c for 20 minutes or until center is almost set.
11. Once done remove from oven and let it to set in fridge overnight.
12. Remove from moulds and top with chicken floss before serving.
Tips: Microwave the cheesecake for 20 seconds before serving to get the flowing lava effect.

 

With separate upper and lower heat settings ranging from 70c to 230c, and analog knobs simplifying all operations for the user, as well as its double insulated glass door to prevent burning hot oven door, I say the oven is user friendly.

But what captured my attention most on top of the precise control, is probably the automatic Fermentation function that produces optimum environment for fermentation. And that means hello yogurt in bigger batch, salut french loafs and annyeong kimchi. I’ll be sharing my experience and more cooking recipes with this oven soon.
