Recipe: Homemade buns for starters and cheese sticks

Making your own buns for starters is really not difficult if you have endurance to the long waiting time in the process of the bun/bread making. When deciding to make some bread, it is always useful to have in mind exactly what sort of bread or buns so you can prepare the ingredients. The filling can vary from sweet to savoury, depending on occasion and desired varieties.

Here I am sharing the simple recipe for plain buns and cheese sticks.

HP flour 400g
Butter 40g
Salt ½ teaspoon
Warm water 250ml
Sugar 2 tablespoon
Dry yeast 2 teaspoon
Baking powder 1 teaspoon
Mozarella cheese (optional)
Sardine/tuna/sausage (optional)

1. Dilute 1 tablespoon sugar into 250 ml warm water.
2. Add 2 teaspoon yeast and wait approximately 15 minutes
3. After rising, add 400g HP flour, 1 tablespoon sugar, 1 teaspoon baking powder, 40g butter, ½ teaspoon salt and stir in mixer till the mix becomes dough (significantly non- sticky). Remove mixer stirrer and cover dough with cling wrap for approximately 10 minutes.

4. Cut the dough into smaller and desired size, and let it rise (to about double the size). This takes approximately 1 hour and 15 minutes.

5. Now, it is ready to shape it, but don’t overdo it as it would affect the texture of bread. This time around I took half dough to make into mini buns, and the other half being shaped into long sticks. (Wrap dough with desired fillings like sardine to make sardine buns but this is optional) Or try twisting into a knot so you get a bigger loaf.

6. Leave these shapped buns or breads to rise to approximately double the size.

7. For the cheese bread sticks, grate some mozzarella cheese onto the bread sticks and the dough are now ready to go into pre-heated oven.
8. Bake at 170 degree for 15-18 minutes.

The buns are great to serve as starters with some salted butter while the cheese sticks are fun for school recess. The same recipe can be made into many other buns as well. If you want the golden colour on the bread, brush it with egg yolk after shaping the buns.

Also try rolling cheese slices into the dough, and bake as per usual. After cooling the rolled bun, slice it and oven baked it again. This time at a lower temperature for a longer period of time. Preheat oven at 150 degree and later reduced to 110 degree for almost 30-40 minutes. After which it would turn into Cheese Roti Kok (toast bread) and this could store up to two weeks.

Enjoy freshly baked buns and breads from home and have fun making them.
